[P家廚房]苦瓜炒鹹蛋+油菜炒肉絲食譜
好久沒下廚囉!趁著去賣場補貨想一些不一樣的菜色來煮,不然常常吃一樣的也是會膩阿!今天就來煮個我不喜歡吃苦瓜之苦瓜炒鹹蛋跟超簡單油菜炒肉絲

▼首先是準備材料:苦瓜一顆(山苦瓜也可以)、鹹蛋二顆、蒜頭少許

▼先將苦瓜對半切,然後將子清乾淨,苦瓜會苦就是因為裡面有一層白白的膜,用力努力把它弄掉就不會苦了

▼接著將苦瓜切片,厚薄看個人

▼準備一鍋熱水,將苦瓜下水燙熟,可在水裡加少許鹽跟油

▼在苦瓜下水的時間可以處理鹹蛋,將蛋白跟蛋黃分開,然後都切碎

▼接著將燙好有點透明的苦瓜撈起備用

▼起油鍋,先炒蛋黃

▼炒到蛋黃有點冒泡

▼接著將蒜末、蛋白、跟辣椒一起下鍋炒(我是用辣椒醬取代辣椒,用辣椒的話配色會比較好看)喜歡加蔥的朋友也可以在這時候一起下鍋

▼等材料炒勻將苦瓜丟下去一起炒

▼加一點水悶一下

▼起鍋前試一下味道,基本上有鹹蛋又有辣椒應該是不用再另外調味,但我這次買到鹹”雞”蛋,感覺不怎麼鹹,所以有再調味過

▼再來是油菜炒肉絲,材料很簡單:油菜一把、豬肉絲適量(看你家是不是食肉一族的)、蒜末少許

▼肉可先用鹽、胡椒、米油抓醃,放置十分鐘,喜歡吃原味不醃也可以

▼先下蒜頭爆香

▼接著把肉絲下鍋炒至八分熟

▼再來將油菜下鍋
